Muffins of chocolate and coconut


If you like the taste of coconut and chocolate don't wait any longer! Prepares the oven, there we go.

To prepare this recipe is really easy, the ingredients are easy to find because the shredded coconut you can find it in any supermarket and, what I can tell of the flavor, is the perfect mix between chocolate and coconut.

Depending on the amount of coconut to cast, you'll find a cake that is very influenced by the texture of the coconut, that is to say, it is as the more “acocado”, a little more dense and with a taste that's fascinating. What more I can say, you try it and let me know!

  • 4 tablespoons of shredded coconut
  • 80 grams of cocoa powder
  • 200 grams of flour
  • 120 grams of brown sugar
  • 1 pinch of salt
  • Half a level teaspoon of bicarbonate of soda
  • 10 grams of yeast chemical
  • 150 grams chocolate desserts sliced or nuggets
  • 6 tablespoons mild olive oil or sunflower oil
  • 2 eggs
  • 125 ml of milk


In a bowl high we're going to mix all the dry ingredients: shredded coconut, cocoa powder, sifted flour, brown sugar, salt, baking soda, baking powder and the chopped chocolate. Stir gently so that all ingredients are well blended and reserve.

In another bowl mix the liquids: oil, eggs, and milk. Stir it well, if you have some electric rods the better, until the ingredients are thoroughly mixed.

Add the liquids to the bowl of dry ingredients and stir. You can taste the mixture to see if it needs more coconut according to your taste, but you have to always keep in mind that you canít be with the quantities if you are too dry.

Put the oven to preheat to a temperature of 200º.

In the meantime, let's prepare the molds. On this occasion, I have used this mold of Pyrex of the range Asymmetry, the best thing about this mold is that in addition to being for 12 muffins or cupcakes, is that it has a handle to make it easier to get it out of the oven, and in addition nice is very light.

Fill up to 1/3 capsules of the muffins and, when the oven has reached the temperature, it will be time to put it in. As always, the time depends on each oven, mine have been on for about 15 minutes more or less, before you get them pierced to see if they are dry and outside.

Let them cool and ready to do a normal day, a day 10.


If you want to give a touch more coconut, you can make a glaze or put grated coconut directly above it that is inspiring you the coconut flavor!

Even, you can change the milk for coconut milk and enhance the flavor. I haven't tried it but if anyone is encouraged comentadme and the rest of us what we aim.
